Product Description

Sliced Halal Salami (Dry Fermented), with a diameter of approximately 55mm (+- 1 to 2mm). Comes in a weight of 6 x 1kg units, with each unit containing an average of 246 slices.

Ingredients & Composition

Contains turkey meat (88%), beef fat (15%), iodised salt, maltodextrin, spices, dextrose, flavor enhancer (E621), acidifier (E575), antioxidant (E392/E301), beetroot powder, spice extract, acidity regulator (E325/E262), preservative (E250), mature culture, and smoke. Made from 105g turkey meat and 13g beef fat per 100g of finished product.

Allergen & Dietary Information

Allergens: Contains Bovine products, gluten (wheat, barley, rye, oat, spelt, Kamut), and gelatine (species and origin not specified). Not suitable for vegetarians or vegans. Does not contain nuts or nut oils.

Free from artificial preservatives, colours, flavours, sweeteners, azo dyes, benzoates, BHA/BHT, and GM ingredients. Contains aspartame, artificial colours, flavours, and sweeteners.

Food Safety & Quality Assurance

The product undergoes physical, chemical, and microbiological checks including size, colour, weight, sieving, metal detection, pH, moisture, histamine, fatty acids, Salmonella, Aflatoxin, and pesticide residues, with specified target and maximum levels. It is tested in accredited laboratories (UKAS 1916) with routine sampling for Total Aerobic Colony Count, coliforms, coagulase-positive staphylococci, E. coli, Salmonella, and Listeria.

Production & Packaging Process

The product is dry fermented with a shelf life of 12 months when stored at -18°C. Manufacturing includes critical control points such as metal detection (ferrous, non-ferrous, stainless steel) at start and end of shifts. Packaging complies with EC regulation 1935/2004, used in modified atmosphere packaging, with specified case and pallet dimensions, and layers per pallet.

Packaging & Storage

Packaged in accordance with EC Regulation No. 1935/2004. The product is frozen at -18°C with a shelf life of 12 months. Pallet configuration consists of 5 cases per layer, 60 cases per pallet, with the full pallet being 7ft high, 4ft wide, and 4ft long.

Warranty & Certification

The product conforms with all relevant EC legal requirements. The specification will not be amended without approval from Hargreaves Quality Foods Ltd. The person responsible for issue is Harry Hargreaves, Technical Director, as of 25/02/2026.
